We went on a road trip with our friends over at Localis to Twin Peaks Orchards. Nestled in the foothills of Newcastle, just a 30-minute drive from Downtown, Sacramento. Owner/Executive Chef Christopher Barnum-Dann and Co. planned a 4-course family-style menu for 80+ guest. They cooked and plated right in front of us. Here’s the photo diary.

FIRST COURSE
Stone Fruit, Arugula, Walnut, Chevre, Cilantro & Pink Peppercorn Vinaigrette

SECOND COURSE
King Salmon Ceviche, Pickled Onions, Plum, Mint, Radish, New Potato Chips

THIRD COURSE
Braised and Roasted Full Barn Chicken, Peach Risotto, Shaved and Pickled Squash, Wilted Arugula, Fennel Blossom Butter

FINALE
Nectarine Panna Cotta, Sweet Pickled Nectarines, Lemon Verbena Coulis, Mint Cookie Gremolata, Brown Sugar Meringue
